Eggsactly How I Would Do It, If I'd Thought of It

cutouteggs According to the good folks at Cook's Illustrated, if you'd like silky smooth deviled egg filling, run the yolks through a Mouli grater (for small batches) or a fine sieve (for large batches) before mixing with the other ingredients. Consider yourself informed.
